Home Canning and Conserving

Home Canning kills micro organisms by heating. By sealing the pots and bottles airtight, new germs are prevented from entering the product. The food is heated for a certain time in thick-walled glass jars. During cooling, vacuum is created in the pot. The advantage of this method is that products have a longer shelf life, when it has been done correctly. The disadvantage is that very sensitive nutrients can be lost partly, because it has to be heated for a relatively long time.
